Brooding and dark, the 2021 ‘Bouquet Garni’ pours an inky purple color in the glass. On the nose, it’s savory with notes of black plum, sappy herbs, cracked peppercorn, and lavender oils. Full-bodied and plush, with velvety, ripe tannins and a long finish, it’s light on its feet and will show its best if given a few years to lean into its more gamey and meaty notes, which will certainly develop with time.
