Inspired by the beloved white blends of the Rhône, 'M5' is made up of mostly Grenache Blanc, with varying quantities of Roussanne, Viognier, Marsanne, and Picpoul Blanc coming from the Los Olivos District and Happy Canyon of Santa Barbara. Each component is fermented separately in neutral French oak barriques and puncheons and aged on fine lees for 8 months. A small portion of the wine is allowed to go through malolactic fermentation to increase mouthfeel.
